A vibrant dish bursting with flavor, combining juicy salmon with fresh vegetables and zesty lemon for a delightful meal any night of the week.

Ingredients

  • 4 (6 oz) fresh salmon fillets
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Arrange salmon fillets in the center of the dish, surrounding them with cherry tomatoes and baby spinach.
  4. Sprinkle minced garlic over the top, then season with salt, pepper, and oregano. Drizzle lemon juice on everything.
  5. Bake for 20-25 minutes or until the salmon flakes easily with a fork.
