Mediterranean Chicken Skillet is a colorful, one-pan dish brimming with juicy chicken and fresh vegetables, perfect for a quick weeknight meal or a casual gathering.

  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, thinly sliced
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Dice the chicken into bite-sized pieces and chop the vegetables.
  2. In a bowl, marinate the chicken with olive oil, lemon juice, oregano, salt, and pepper. Set aside.
  3. Heat a large skillet over medium-high heat. Add olive oil, garlic, and red onion; sauté until fragrant (about 3-4 minutes).
  4. Add bell peppers and cherry tomatoes; stir until slightly softened (around 5 minutes).
  5. Push veggies to one side of the skillet and add marinated chicken to the other side. Cook until browned on all sides (approximately 8-10 minutes).
  6. Toss everything together in the skillet and cook for an additional couple of minutes before serving hot.

Notes

  • For added flavor, consider incorporating olives or artichokes.
  • You can swap in seasonal veggies based on availability.
