4 boneless, skinless chicken breasts (about 1 lb)
3 garlic cloves, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup cherry tomatoes, halved
1 medium red onion, thinly sliced
3 tbsp extra virgin olive oil
Juice of 1 lemon (about 2 tbsp)
2 tsp dried oregano
Salt and pepper to taste
Instructions
Dice the chicken into bite-sized pieces and chop the vegetables.
In a bowl, marinate the chicken with olive oil, lemon juice, oregano, salt, and pepper. Set aside.
Heat a large skillet over medium-high heat. Add olive oil, garlic, and red onion; sauté until fragrant (about 3-4 minutes).
Add bell peppers and cherry tomatoes; stir until slightly softened (around 5 minutes).
Push veggies to one side of the skillet and add marinated chicken to the other side. Cook until browned on all sides (approximately 8-10 minutes).
Toss everything together in the skillet and cook for an additional couple of minutes before serving hot.
