  • 1 can (15 oz) black beans, rinsed and mashed
  • 1 cup rolled oats
  • 1 cup fresh vegetables (bell peppers, carrots, or zucchini), finely chopped
  • 2 tsp cumin
  • 2 tsp paprika
  • ½ cup breadcrumbs (plain or seasoned)
  • 1 large egg (or flax egg for vegan option)

Instructions

  1. Prep your veggies: Wash and finely chop the fresh vegetables.
  2. Mash the beans: In a large bowl, mash the black beans until mostly smooth.
  3. Combine ingredients: Add chopped veggies, oats, spices, breadcrumbs, and the egg (or flax egg). Mix well until combined.
  4. Shape patties: Form mixture into patties about ½ inch thick and place them on a parchment-lined plate.
  5. Cook: Heat olive oil in a skillet over medium heat and cook each patty for 4-5 minutes per side until golden brown.
  6. Serve: Assemble on toasted buns with your favorite toppings like lettuce, tomato, or avocado.
