  • 34 Boneless, Skinless Chicken Breasts
  • 1 cup Greek Yogurt
  • 2 tbsp Fresh Lemon Juice
  • 3 Garlic Cloves, minced
  • 2 tsp Dried Oregano
  • 1 cup Cherry Tomatoes, halved
  • 1 Cucumber, diced
  • ½ cup Kalamata Olives, sliced
  • ½ cup Feta Cheese, crumbled
  • Pita Bread or Rice for serving

Instructions

  1. Marinate the chicken by mixing Greek yogurt, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add chicken breasts and coat well. Cover and refrigerate for at least 30 minutes.
  2. Preheat your grill to medium-high heat or oven to 400°F (200°C).
  3. Cook the marinated chicken on the grill for about 6-8 minutes per side or bake in the oven for 20-25 minutes until fully cooked.
  4. While the chicken is cooking, chop cherry tomatoes and cucumber into bite-sized pieces.
  5. Assemble each bowl starting with a base of rice or pita bread. Slice grilled chicken and place generously on top.
  6. Top with cherry tomatoes, cucumber slices, olives, feta cheese, and drizzle with olive oil or tzatziki sauce.
