  • 4 boneless, skinless chicken thighs or breasts
  • ⅓ cup honey
  • ¼ cup soy sauce (low-sodium recommended)
  • ¼ cup ketchup
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • ½ tsp black pepper
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp sesame seeds (optional, for garnish)
  • 2 tbsp green onions, sliced (for garnish)

Instructions

  • Place the chicken in the Crockpot.
  • In a small bowl, whisk together honey, soy sauce, ketchup, garlic, thyme, and black pepper. Pour the mixture over the chicken.
  • Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is tender and fully cooked.
  • Remove the chicken and set aside. In a small bowl, mix cornstarch and water to create a slurry. Stir the slurry into the sauce in the Crockpot.
  • Cook on high for 5–10 minutes, or until the sauce thickens. Return the chicken to the Crockpot and coat with the sauce.
  • Garnish with sesame seeds and green onions before serving.

  • Serve with rice, quinoa, or steamed vegetables for a complete meal.
  • Add a pinch of red pepper flakes for a hint of spice.
