  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice and vegetable broth. Bring to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer for about 18 minutes or until the liquid is absorbed and the rice is tender.
