Chicken Tortilla Soup is a comforting dish filled with tender chicken, zesty vegetables, and topped with crispy tortilla strips. Perfect for cozy nights or gatherings!

Ingredients

  • 4 boneless skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 4 cups low-sodium chicken broth
  • 2 cups tortilla strips
  • 1/4 cup fresh cilantro, chopped (optional)
  • Juice of 2 limes
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil

Instructions

  1. Gather all ingredients on your counter for easier cooking.
  2. In a large pot over medium heat, add olive oil. Sauté chopped onion until translucent, then add minced garlic and cook for about 30 seconds.
  3. Stir in the chopped bell peppers followed by cumin and chili powder; cook until peppers soften.
  4. Add canned tomatoes with their juices and chicken broth to the pot. Stir occasionally and bring to a boil.
  5. Once boiling, reduce heat to low and add chicken breasts. Cover and simmer for about 20 minutes or until the chicken is cooked through.
  6. Remove the chicken from the pot, shred it using two forks, and return it to the soup. Squeeze fresh lime juice over the top before serving with crispy tortilla strips.

Notes

  •  For added flavor, consider including black beans or corn.
  • Avocado slices make an excellent topping for extra creaminess.
