  • 23 boneless skinless chicken breasts
  • 2 bell peppers (mixed colors)
  • 1 medium onion
  • 3 garlic cloves
  • 1 tsp ground cumin
  • 1 tbsp chili powder
  • 2 tbsp lime juice
  • Salt & pepper to taste
  • Tortillas for serving

Instructions

  1. Chop bell peppers and onion into thin strips, and mince garlic.
  2. Place chicken breasts in the crockpot and season with cumin, chili powder, salt, and pepper.
  3. Layer sliced vegetables over the chicken.
  4. Drizzle lime juice on top.
  5. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  6. Shred the chicken inside the crockpot and mix with veggies before serving in warm tortillas.
