Mushroom Chicken is a creamy, one-pan dish featuring tender chicken and savory mushrooms, perfect for a quick weeknight meal that delights everyone at the table.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 cups sliced button or cremini mushrooms
  • 1 cup heavy cream
  • 3 cloves fresh garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1 small yellow onion, chopped
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Prep: Gather all ingredients, chop the onion, and mince the garlic.
  • Cook chicken: Heat olive oil in a large skillet over medium heat. Season the chicken with salt, pepper, and Italian seasoning. Sear for 6-8 minutes per side until golden brown. Remove chicken and set aside.
  • Sauté aromatics: In the same skillet, add chopped onions and minced garlic. Sauté for 3-4 minutes until translucent.
  • Add mushrooms: Stir in sliced mushrooms and cook until softened, about 5 minutes.
  • Make the sauce: Pour in chicken broth and heavy cream. Stir to combine and let simmer for 5-7 minutes until the sauce thickens.
  • Combine: Return the chicken to the skillet, spoon sauce over it, and let it warm through for 2-3 minutes.
  • Serve: Adjust seasoning with salt and pepper if needed and serve over rice or pasta.

Notes

  • For deeper flavor, sauté mushrooms until golden.
  •  Consider using chicken thighs for a juicier option or adding spinach for extra nutrition.
  •  A splash of white wine can enhance the sauce.
