Veggie Lasagna is a vibrant, crowd-pleasing dish that combines layers of creamy cheese and fresh vegetables. This easy recipe is perfect for family dinners or entertaining guests.

  • 9 lasagna noodles (no-boil or traditional)
  • 15 oz ricotta cheese
  • 2 cups fresh spinach
  • 1 medium zucchini, sliced
  • 1 cup button mushrooms, chopped
  • 2 cups marinara sauce
  • 2 cups shredded whole-milk mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 cup fresh basil leaves, divided

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté zucchini and mushrooms until tender, about 5-7 minutes.
  3. In a bowl, mix ricotta cheese with salt, pepper, and half of the basil until well combined.
  4. Start layering: spread marinara sauce on the bottom of the dish, followed by noodles, ricotta mixture, sautéed veggies, mozzarella cheese, and more sauce. Repeat layers until ingredients are used up.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
  6. Garnish with remaining basil before serving.

  • Feel free to customize by adding different vegetables like bell peppers or eggplant.
  • A pinch of nutmeg in the cheese mixture adds an unexpected depth of flavor.
