Ingredients
Scale
14 oz firm tofu, cubed
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 cups broccoli florets
1 medium carrot, thinly sliced
3 cloves garlic, minced
3 tbsp low-sodium soy sauce
1 tsp sesame oil
2 green onions, chopped
Instructions
Press the tofu between paper towels for about 15 minutes to remove excess moisture.
Heat a non-stick skillet over medium heat. Add oil and cook the cubed tofu until golden brown on all sides (8-10 minutes).
Add minced garlic and the chopped bell peppers, broccoli, and carrots. Sauté until vegetables are tender-crisp (5-7 minutes).
Pour in soy sauce and sesame oil; stir to coat evenly and heat through for an additional minute.
Top with chopped green onions before serving.
Notes
Try using snap peas or zucchini for added crunch.
Substitute soy sauce with teriyaki for a different flavor profile.
