This vibrant tofu stir fry features colorful vegetables and firm tofu, all tossed in a savory sauce for a quick, healthy meal that’s bursting with flavor.

Ingredients

  • 14 oz firm tofu, cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 1 medium carrot, thinly sliced
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 green onions, chopped

Instructions

  1. Press the tofu between paper towels for about 15 minutes to remove excess moisture.
  2. Heat a non-stick skillet over medium heat. Add oil and cook the cubed tofu until golden brown on all sides (8-10 minutes).
  3. Add minced garlic and the chopped bell peppers, broccoli, and carrots. Sauté until vegetables are tender-crisp (5-7 minutes).
  4. Pour in soy sauce and sesame oil; stir to coat evenly and heat through for an additional minute.
  5. Top with chopped green onions before serving.
