Spring Blueberry Cobbler is a delightful dessert that celebrates the season with juicy blueberries and a flaky crust, perfect for any occasion or cozy gathering.

  • 2 cups fresh blueberries
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ cup whole milk (or almond milk)
  • ¼ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the blueberries and toss them with ¼ cup of sugar in a bowl. Set aside.
  3. In another bowl, whisk together flour, baking powder, remaining sugar, milk, melted butter, and vanilla until smooth.
  4. Gently fold in the blueberries to the batter without smashing them.
  5. Grease an 8-inch square baking dish and pour the batter evenly into it.
  6. Bake for 30-35 minutes until golden brown and bubbly.

Notes

  •  For added zest, sprinkle lemon peel over the blueberries before combining.
  •  Substitute half of the all-purpose flour with almond flour for a nutty flavor.
