  • 12 ounces rigatoni pasta
  • 3 tablespoons extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 1 teaspoon red pepper flakes
  • 28-ounce can crushed tomatoes
  • ½ cup freshly grated Parmesan cheese
  • Fresh basil or parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Cook rigatoni in boiling salted water until al dente (10-12 minutes). Reserve ½ cup pasta water, then drain.
  2. In a skillet over medium heat, sauté minced garlic and red pepper flakes in olive oil until fragrant.
  3. Add crushed tomatoes to the skillet and simmer for about 10 minutes, stirring occasionally.
  4. Toss drained rigatoni into the sauce, adding reserved pasta water as needed for desired consistency.
  5. Stir in Parmesan cheese and season with salt and pepper. Serve hot, garnished with fresh herbs.
