  • 1 cup granulated sugar (200g)
  • 1/2 cup water (120ml)
  • 1 tsp vanilla extract
  • 2 tbsp freshly squeezed lemon juice

  1. Wash and chop the rhubarb into one-inch pieces.
  2. In a medium saucepan over medium heat, combine the rhubarb, sugar, and water. Stir until the sugar dissolves.
