  • 4 boneless skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 bell peppers, diced (any color)
  • 1 medium onion, diced
  • Cilantro for garnish (optional)
  • Juice of 1 lime (optional)

Instructions

  1. Dice the onion and bell peppers into bite-sized pieces.
  2. Place the chicken breasts at the bottom of the crockpot.
  3. Layer the diced tomatoes, black beans, onions, and bell peppers on top of the chicken.
  4. Sprinkle chili powder and cumin over the mixture.
  5. Add the minced garlic.
  6. Cover and cook on low for 6 hours or high for 3 hours.
