  • 23 boneless, skinless chicken breasts
  • 8 oz spaghetti
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti in salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté diced onions and bell peppers for 5 minutes; add minced garlic and cook for another minute.
  3. Cut chicken into bite-sized pieces, season with salt and pepper, and add to the skillet. Cook until browned and fully cooked, approximately 6-8 minutes.
  4. Pour in chicken broth and simmer gently. Stir in heavy cream and Italian seasoning, scraping any bits from the skillet.
  5. Add cooked spaghetti to the skillet, tossing to combine for about 2-3 minutes. Sprinkle with Parmesan cheese until melted.
