Beef Enchiladas are a flavorful dish featuring seasoned ground beef, melted cheese, and vibrant toppings, all wrapped in soft corn tortillas. A crowd-pleaser for any meal!

  • 1 lb ground beef (80/20)
  • 8 corn tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 cup salsa (mild or spicy)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Finely chop the onion and garlic.
  2. In a large skillet over medium heat, add olive oil and sauté diced onions until translucent (about 5 minutes).
  3. Add ground beef, minced garlic, cumin, salt, and pepper to the skillet. Cook until browned (about 7 minutes).
  4. Spread some salsa at the bottom of a baking dish. Fill each warm tortilla with the beef mixture and roll tightly.
  5. Place rolled enchiladas seam-side down in the baking dish. Top with shredded cheese and additional salsa if desired.
  6. Bake for approximately 20 minutes until bubbly. Sprinkle with chopped cilantro before serving.

Notes

  •  For extra flavor, taste the beef filling before rolling into tortillas and adjust seasoning as needed.
  • Feel free to substitute ground beef with shredded chicken or black beans for a vegetarian option.
