1 lb ground beef (80/20)
8 corn tortillas
2 cups shredded cheddar and Monterey Jack cheese
1 cup salsa (mild or spicy)
1 medium onion, diced
2 cloves garlic, minced
1 tsp ground cumin
2 tbsp olive oil
Fresh cilantro, for garnish
Instructions
Preheat oven to 350°F (175°C). Finely chop the onion and garlic.
In a large skillet over medium heat, add olive oil and sauté diced onions until translucent (about 5 minutes).
Add ground beef, minced garlic, cumin, salt, and pepper to the skillet. Cook until browned (about 7 minutes).
Spread some salsa at the bottom of a baking dish. Fill each warm tortilla with the beef mixture and roll tightly.
Place rolled enchiladas seam-side down in the baking dish. Top with shredded cheese and additional salsa if desired.
Bake for approximately 20 minutes until bubbly. Sprinkle with chopped cilantro before serving.
Notes
For extra flavor, taste the beef filling before rolling into tortillas and adjust seasoning as needed.
