  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup brown rice
  • 1 cup fresh bell peppers, sliced (red and yellow)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 avocado, diced
  • 1 cup salsa
  • Fresh cilantro (optional), for garnish

Instructions

  1. Cook the brown rice according to package instructions; set aside.
  2. In a large skillet over medium heat, add olive oil. Sauté onions until translucent; add minced garlic and cook until fragrant.
  3. Add ground beef to the skillet. Cook until browned throughout, breaking it apart as it cooks. Drain any excess fat if needed.
  4. Stir in cumin, chili powder, and black beans; mix well and warm through.
  5. Sauté sliced bell peppers in a separate pan until slightly softened but still crisp.
  6. Layer cooked rice in bowls; top with beef mixture, bell peppers, diced avocado, salsa, and cilantro if desired.

Notes

  • Substitute quinoa for brown rice for a gluten-free option.
  • Add jalapeños or hot sauce for extra spice.
