Ingredients

Scale
  • 1 lb beef sirloin, thinly sliced
  • 2 cups cooked rice (jasmine recommended)
  • 1 cup bell peppers, chopped
  • 1 cup carrots, julienned
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger, grated

Instructions

  1. Slice beef sirloin against the grain into thin strips and chop vegetables into bite-sized pieces.
  2. Prepare rice according to package instructions or use leftovers; fluff once cooked.
  3. Heat sesame oil in a large skillet over medium-high heat. Sauté garlic and ginger until fragrant (about 30 seconds).
  4. Add sliced beef to the skillet and cook until browned on all sides (4-5 minutes).
  5. Toss in the chopped vegetables and stir-fry until tender-crisp (about 3-4 minutes).
  6. Pour soy sauce over the mixture, stir to coat evenly, and simmer for an additional minute.
  7. Serve hot over rice and garnish with sliced green onions.

Notes

  • Feel free to substitute beef with chicken or tofu for a different protein option.
  •  Experiment with seasonal vegetables or add chili flakes for extra heat.
  •  For meal prep, store leftovers in airtight containers for up to three days.
