  • Zest of 2 lemons
  • 2 tbsp fresh lavender buds
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp pure vanilla extract
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy (about 3 minutes).
  3. Mix in the lemon zest, lavender, vanilla extract, and lemon juice until well combined.
  4. In another bowl, whisk together the flour and salt. Gradually fold this mixture into the wet ingredients until just combined.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about two inches apart. Gently flatten each ball slightly.
  6. Bake for 12-15 minutes or until edges are lightly golden. Cool on the baking sheets for five minutes before transferring to wire racks.
