  • 2 cups mixed vegetables (zucchini, bell peppers, carrots), chopped
  • 1 can (14 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 3 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup low-sodium vegetable broth
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 cups spinach or kale
  • Juice of 1 lime

Instructions

  1. Prep your vegetables by washing and chopping them into bite-sized pieces.
  2. In a large pot over medium heat, add oil and sauté minced garlic and grated ginger until fragrant (about 1 minute).
  3. Add mixed vegetables with a pinch of salt; stir occasionally for about 5 minutes until slightly tender.
  4. Pour in coconut milk and vegetable broth; stir well to combine.
  5. Sprinkle in curry powder and simmer for an additional 5 minutes to infuse flavors.
  6. Stir in rinsed chickpeas and greens; cook until wilted (approximately 3 more minutes). Finish with lime juice before serving.
