Creamy Tuscan Chicken is a rich and flavorful dish featuring tender chicken, vibrant spinach, and juicy cherry tomatoes enveloped in a delicious cream sauce. Perfect for cozy family dinners!

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • 2 tsp dried Italian herbs
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.
  2. Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, lower the heat and add minced garlic. Sauté for about 30 seconds until fragrant.
  4. Add fresh spinach and cook until wilted.
  5. Pour in heavy cream, stirring gently to combine with the spinach and garlic. Add grated Parmesan cheese and mix until melted.
  6. Incorporate halved cherry tomatoes into the sauce and simmer for an additional 5 minutes until thickened.
  7. Return the chicken to the skillet and coat it with the creamy sauce. Adjust seasoning with salt, pepper, and dried herbs as needed.
