Veggie Lasagna in a Baking Dish

Savor layers of fresh vegetables, creamy ricotta, and gooey mozzarella in this comforting veggie lasagna that everyone will love. Perfect for family dinners or gatherings.

Ingredients

  • 9 no-boil lasagna noodles
  • 15 oz whole milk ricotta cheese
  • 1 medium zucchini, sliced
  • 4 cups fresh spinach
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup freshly grated parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish with olive oil.
  2. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add zucchini and spinach; cook until tender, about 5 minutes.
  3. In a bowl, mix ricotta cheese with salt, pepper, and chopped basil until creamy.
  4. Layer marinara sauce at the bottom of the baking dish. Add noodles, half the ricotta mixture, sautéed veggies, mozzarella, and more sauce. Repeat layers until ingredients are used up.
  5. Finish with remaining mozzarella and parmesan on top. Cover with aluminum foil and bake for 30 minutes. Uncover and bake an additional 15 minutes until golden brown.

Notes

  • Customize the recipe by adding seasonal vegetables like bell peppers or mushrooms.
  • For added flavor, include red pepper flakes or Italian seasoning.
  •  Let the lasagna rest for about 10 minutes before serving to allow layers to set.
