  • 4 medium sweet potatoes
  • 1 lb ground turkey or chicken
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen or canned corn
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ½ cup sour cream or Greek yogurt
  • ¼ cup chopped fresh cilantro

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Bake sweet potatoes on a parchment-lined baking sheet for 45-50 minutes until tender.
  3. 3. In a skillet over medium heat, cook ground turkey or chicken with taco seasoning until browned, about 7-10 minutes.
  4. 4. Stir in black beans and corn; heat through for another 3-4 minutes.
  5. 5. Slice baked sweet potatoes open and fluff insides with a fork. Spoon in the taco mixture.
  6. 6. Top with shredded cheese while warm, then add sour cream or Greek yogurt and garnish with cilantro.
