Spinach Cottage Cheese Flagels are a nutritious and tasty alternative to traditional bagels. With a crispy exterior and soft, cheesy center, they make for an ideal snack or brunch treat.

Ingredients

Scale
  • 1 cup fresh spinach, chopped
  • 1 cup low-fat cottage cheese
  • 1 cup all-purpose flour (or gluten-free flour)
  • 2 tsp baking powder
  • 2 large eggs
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp sesame seeds (optional)

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Sauté spinach in a pan over medium heat until wilted, then let cool.
  3. 3. In a bowl, blend cottage cheese and eggs until smooth.
  4. 4. Gradually add flour and baking powder, stirring until combined.
  5. 5. Fold in cooled spinach, salt, and pepper until evenly mixed.
  6. 6. Shape dough into bagel-like rings on a parchment-lined baking sheet. Optionally brush with egg wash and sprinkle sesame seeds.
  7. 7. Bake for 20-25 minutes or until golden brown.

Notes

  •  Ensure spinach is well-drained to avoid sogginess; use a clean towel to squeeze out excess moisture.
  •  For extra flavor, consider adding herbs like dill or chives.
