  • 2 cups fresh spinach, chopped
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • ½ cup sour cream (or Greek yogurt)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ¼ tsp black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a large mixing bowl, combine cream cheese, sour cream, mozzarella, Parmesan, garlic powder, and black pepper until smooth.
  3. Gently fold in chopped spinach and artichokes until well mixed.
  4. Add beaten eggs and panko breadcrumbs; stir until evenly combined.
  5. Drop heaping tablespoons of the mixture into the prepared baking dish, spacing them evenly.
  6. Bake for 20-25 minutes or until golden brown and bubbly. Allow to cool slightly before serving.

Notes

  • Swap mozzarella for feta or add chopped sun-dried tomatoes for a unique flavor twist.
