  • 1 can (14.75 oz) wild-caught canned salmon, drained and flaked
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/4 cup chopped green onions
  • 1/4 cup mayonnaise (or light mayo)
  • 2 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil or vegetable oil (for frying)

Instructions

  1. In a large bowl, combine flaked salmon, breadcrumbs, chopped green onions, eggs, mayonnaise, lemon juice, salt, and pepper. Mix until well combined but not mushy.
  2. Form mixture into small patties about 2 inches wide and place on a plate lined with parchment paper.
  3. Heat olive oil in a skillet over medium heat until shimmering. Cook half of the patties for 3-4 minutes on each side until golden brown. Repeat with remaining patties.
  4. Transfer cooked patties to a paper towel-lined plate to absorb excess oil before serving.
