Ingredients
Scale
1 can (14.75 oz) wild-caught canned salmon, drained and flaked
1 cup plain breadcrumbs
2 large eggs
1/4 cup chopped green onions
1/4 cup mayonnaise (or light mayo)
2 tbsp fresh lemon juice
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil or vegetable oil (for frying)
Instructions
In a large bowl, combine flaked salmon, breadcrumbs, chopped green onions, eggs, mayonnaise, lemon juice, salt, and pepper. Mix until well combined but not mushy.
Form mixture into small patties about 2 inches wide and place on a plate lined with parchment paper.
Heat olive oil in a skillet over medium heat until shimmering. Cook half of the patties for 3-4 minutes on each side until golden brown. Repeat with remaining patties.
Transfer cooked patties to a paper towel-lined plate to absorb excess oil before serving.
Notes
For added flavor, consider mixing in chopped herbs like dill or parsley.
If you prefer a crunchier texture, swap breadcrumbs for crushed crackers or add finely diced vegetables like bell peppers.
