2 ripe avocados
1 cup cherry tomatoes, halved
1 cup fresh basil leaves
1 cup mozzarella balls (bocconcini)
2 tbsp balsamic glaze
2 tbsp extra virgin olive oil
Salt and pepper to taste
Instructions
Wash cherry tomatoes and basil leaves. Halve the tomatoes and leave the basil whole.
Slice each avocado in half lengthwise and remove the pit. Scoop out some flesh to create space for stuffing.
In a bowl, combine halved cherry tomatoes, mozzarella balls, and chopped basil leaves. Drizzle with olive oil and season with salt and pepper.
Generously fill each avocado half with the tomato-basil-mozzarella mixture.
Drizzle balsamic glaze over each stuffed avocado for added flavor.
Serve immediately on a platter garnished with extra basil leaves if desired.
