  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup roasted unsalted peanuts
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 4 green onions, sliced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 4 tbsp low-sodium soy sauce
  • 2 tsp Sichuan peppercorns
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 2 tsp sesame oil
  • 2 tbsp vegetable oil

Instructions

  1. Chop chicken into bite-sized cubes. Dice the bell peppers and slice the green onions.
  2. In a bowl, mix soy sauce, brown sugar, minced garlic, ginger, Sichuan peppercorns, and cornstarch to create the sauce.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until golden brown (about 5-7 minutes).
  4. Add the diced bell peppers and peanuts; stir for another few minutes until vegetables soften.
  5. Pour the sauce over the cooked chicken and vegetables. Cook for an additional 2-3 minutes until sauce thickens.
  6. Serve hot over rice or noodles.
