  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the almond milk, eggs (or flax eggs), maple syrup, and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry ingredients, stirring gently until just mixed.
  5. Fold in the diced apples until evenly distributed.
