1 lb ground beef
4 medium potatoes, diced
1 medium onion, diced
2 cloves garlic, minced
1 tsp paprika
1 tsp dried oregano
Salt and pepper, to taste
1/2 cup beef broth (or water)
2 tbsp olive oil
Fresh parsley, chopped (for garnish)
Instructions
Heat olive oil in a large skillet over medium-high heat. Add the diced potatoes and cook until golden and slightly crispy, about 8-10 minutes. Remove the potatoes from the skillet and set aside.
In the same skillet, add the ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
Add the onion and garlic to the skillet, cooking for 2-3 minutes until softened.
Stir in the paprika, oregano, salt, and pepper. Add the cooked potatoes back into the skillet, then pour in the beef broth. Stir to combine.
Cover and simmer for 10-15 minutes, or until the potatoes are fully cooked and tender.
Garnish with fresh parsley and serve hot.
