  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup plain Greek yogurt
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • Fresh cilantro for garnish

Instructions

  1. Marinate the Chicken: In a bowl, mix yogurt, garlic, ginger, cumin, coriander, cayenne pepper, and salt. Add chicken and coat well. Marinate in the fridge for at least 30 minutes.
  2. Sear the Chicken: Heat oil in a pan over medium heat. Add marinated chicken and sear until golden brown on all sides (about 5–7 minutes). Remove and set aside.
  3. Create the Sauce Base: In the same pan, sauté onions until translucent (about 4–5 minutes).
  4. Add Tomatoes and Simmer: Stir in diced tomatoes along with any leftover marinade. Simmer for about 10 minutes.
  5. Finish Cooking: Stir in coconut milk and return seared chicken to the pan. Simmer for an additional 15 minutes until thickened.
  6. Garnish & Serve: Sprinkle chopped cilantro before serving. Enjoy with rice or naan.
