Chicken Shawarma is a mouthwatering Middle Eastern delight featuring marinated chicken, wrapped in soft pita with fresh veggies. Perfect for family dinners or casual gatherings.

  • 1.5 lbs boneless, skinless chicken thighs
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp paprika (sweet or smoked)
  • 1 cup full-fat yogurt
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a large bowl, mix yogurt, garlic, cumin, coriander, paprika, lemon juice, olive oil, salt, and pepper. Add chicken thighs and coat evenly. Cover and refrigerate for at least 1 hour or overnight.
  2. Preheat Oven/Grill: If using an oven, preheat to 425°F (220°C). For grilling, prepare your grill according to instructions.
  3. Cook the Chicken: Arrange marinated chicken on a lined baking sheet or directly on the grill. Roast or grill for about 20-25 minutes until fully cooked and slightly charred.
  4. Rest & Slice: Let the chicken rest for 5 minutes before slicing into thin strips.
  5. Assemble Shawarma: Layer sliced chicken in warm pita bread with fresh veggies like tomatoes and cucumbers. Drizzle with tahini sauce or yogurt sauce.
