  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup fresh parsley, packed
  • 1/2 cup fresh cilantro, packed
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp baking powder
  • 2 tbsp olive oil (plus more for drizzling)
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, olive oil, lemon juice, salt, and pepper. Pulse until finely chopped but slightly chunky.
  3. Scoop out the mixture using a tablespoon and shape into balls or patties. Place them on the prepared baking sheet.
  4. Drizzle with olive oil before baking for extra crispiness.
  5. Bake for 25-30 minutes until golden brown and crispy on the outside. Allow to cool slightly before serving.

  • For added flavor variations, try incorporating spices like paprika or cayenne for heat.
