1 bunch fresh asparagus (about 1 pound)
4 oz goat cheese (crumbled)
2 medium eggs
1 cup heavy cream
¼ cup grated Parmesan cheese
½ tsp sea salt
¼ tsp black pepper
Zest of 1 lemon
1 tbsp fresh herbs (thyme or basil)
Instructions
Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface to about 1/8 inch thick.
Trim the tough ends off the asparagus and blanch in boiling salted water for 2 minutes until bright green. Drain and set aside.
In a mixing bowl, whisk together eggs, heavy cream, lemon zest, salt, pepper, and crumbled goat cheese until well combined.
Place the puff pastry in a greased tart pan. Arrange blanched asparagus in a single layer over the pastry, then pour the egg mixture on top.
Sprinkle grated Parmesan and fresh herbs over the filling. Bake for 25-30 minutes until golden brown and set in the center. Allow cooling slightly before slicing.
