  • 1 sheet puff pastry (thawed)
  • 1 bunch fresh asparagus (about 1 pound)
  • 4 oz goat cheese (crumbled)
  • 2 medium eggs
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • Zest of 1 lemon
  • 1 tbsp fresh herbs (thyme or basil)

Instructions

  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface to about 1/8 inch thick.
  2. Trim the tough ends off the asparagus and blanch in boiling salted water for 2 minutes until bright green. Drain and set aside.
  3. In a mixing bowl, whisk together eggs, heavy cream, lemon zest, salt, pepper, and crumbled goat cheese until well combined.
  4. Place the puff pastry in a greased tart pan. Arrange blanched asparagus in a single layer over the pastry, then pour the egg mixture on top.
  5. Sprinkle grated Parmesan and fresh herbs over the filling. Bake for 25-30 minutes until golden brown and set in the center. Allow cooling slightly before slicing.

  •  For added flavor, try swapping asparagus with seasonal vegetables like zucchini or bell peppers.
  •  If you prefer a different cheese, ricotta or cream cheese can be substituted for goat cheese.
