  • 1/4 cup unsalted butter (melted)
  • 1/2 cup granulated sugar
  • 16 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs (room temperature)
  • 1/4 cup brown sugar
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Press evenly into the bottom of the prepared pan.
  3. Bake for about 10 minutes until lightly golden; let cool slightly.
  4. In a large bowl, beat softened cream cheese and granulated sugar until smooth. Add sour cream and vanilla, mixing well.
  5. Incorporate eggs one at a time, ensuring each is fully mixed before adding the next.
  6. Pour filling over the cooled crust and bake for 25-30 minutes until just set but still slightly jiggly in the center.
  7. Cool in the fridge for at least four hours or overnight. Sprinkle brown sugar on top and caramelize using a kitchen torch.
