  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • Salt, pepper, and paprika to taste
  • 1 cup frozen peas or mixed vegetables (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and paprika. Sear until golden brown (6-7 minutes per side). Remove from skillet.
  2. In the same skillet, sauté the diced onion until translucent. Add minced garlic and cook for an additional 30 seconds.
  3. Pour in chicken broth and bring to a gentle simmer.
  4. Stir in heavy cream until thickened. Fold in uncooked rice and return the chicken to the skillet, ensuring it’s covered with sauce.
  5. Cover and simmer on low for 20-25 minutes until rice absorbs liquid and is tender.
