  • 1 cup Arborio rice
  • 2 cups fresh mushrooms, sliced (cremini or button)
  • 2 cups fresh spinach
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, heat olive oil. Sauté onion until translucent, then add garlic and cook until fragrant.
  2. Add sliced mushrooms and cook for 5-7 minutes until golden brown.
  3. Stir in Arborio rice for 1-2 minutes until each grain is coated with oil.
  4. Gradually add warm vegetable broth one ladle at a time, stirring gently until absorbed before adding more.
  5. Once nearly all liquid is absorbed (after about 18-20 minutes), fold in fresh spinach until wilted.
  6. Remove from heat and stir in grated Parmesan cheese along with salt and pepper to taste. Serve hot.

Notes

  • For added flavor, consider substituting spinach with kale or adding peas for a colorful twist.
  •  A sprinkle of lemon zest before serving can brighten the dish remarkably.
