Ingredients

Scale
  • 1 cup elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups whole milk
  • 3 tablespoons unsalted butter

  • 4 cups low-sodium vegetable broth
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

  2. Sprinkle flour over the onions and stir constantly for 1-2 minutes until golden brown.
  3. Gradually whisk in the vegetable broth and milk, ensuring no lumps remain. Let it simmer for 3-5 minutes until thickened.
  4. Reduce heat to low, stir in shredded cheddar cheese until melted and creamy.
  5. Add cooked elbow macaroni along with garlic powder, salt, and pepper. Mix well and serve hot.

Notes

  • For added flavor, experiment with different cheeses like gouda or pepper jack.
  • Incorporate veggies such as spinach or broccoli for a nutritious twist.
