  • 1 medium zucchini (approximately 200g), grated and moisture squeezed out
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 large eggs, beaten
  • 3 green onions, finely chopped
  • 1 tsp salt
  • ½ tsp pepper
  • 3 tbsp vegetable oil for frying

Instructions

  1. Prepare the vegetables: Shuck the corn and grate the zucchini. Squeeze out excess moisture from the zucchini using paper towels.
  2. Mix the batter: In a mixing bowl, combine the corn, grated zucchini, flour, baking powder, salt, pepper, green onions, and beaten eggs until just mixed.
  3. Heat the pan: Heat vegetable oil in a skillet over medium heat until shimmering.
  4. Cook fritters: Scoop tablespoon-sized amounts of batter into the pan and flatten slightly. Fry for about 3-4 minutes on each side until golden brown.
  5. Drain and serve: Remove fritters from the skillet and drain on paper towels. Serve warm with your favorite dipping sauce or plain yogurt.
