Ingredients
Scale
1 cup fresh corn kernels
1 medium zucchini (approximately 200g), grated and moisture squeezed out
1 cup all-purpose flour
2 tsp baking powder
2 large eggs, beaten
3 green onions, finely chopped
1 tsp salt
½ tsp pepper
3 tbsp vegetable oil for frying
Instructions
Prepare the vegetables: Shuck the corn and grate the zucchini. Squeeze out excess moisture from the zucchini using paper towels.
Mix the batter: In a mixing bowl, combine the corn, grated zucchini, flour, baking powder, salt, pepper, green onions, and beaten eggs until just mixed.
Heat the pan: Heat vegetable oil in a skillet over medium heat until shimmering.
Cook fritters: Scoop tablespoon-sized amounts of batter into the pan and flatten slightly. Fry for about 3-4 minutes on each side until golden brown.
Drain and serve: Remove fritters from the skillet and drain on paper towels. Serve warm with your favorite dipping sauce or plain yogurt.
Notes
Use fresh corn for optimal sweetness; frozen can work in a pinch.
Feel free to spice up your fritters with bell peppers or herbs for extra flavor.
