Coconut Curry Lentils are a creamy, flavorful dish that combines wholesome lentils with rich coconut milk and aromatic spices. Ready in just 30 minutes, it’s a nourishing meal everyone will love!

Ingredients

  • 1 cup green or brown lentils (dried)
  • 1 can (14 oz) full-fat coconut milk
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 3 cups low-sodium vegetable broth
  • 2 tbsp curry powder
  • 2 cups spinach or kale (optional)
  • Juice of 1 lime

Instructions

  1. Rinse lentils under cold water until the water runs clear.
  2. In a large pot, heat oil over medium heat. Sauté onion for about 5 minutes until soft; add garlic and ginger until fragrant.
  3. Stir in curry powder for 1-2 minutes to release flavors.
  4. Add rinsed lentils, vegetable broth, and coconut milk. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 25–30 minutes until lentils are tender.
  6. If using greens, stir them in during the last few minutes of cooking. Finish with a squeeze of lime juice before serving.

Notes

  • Feel free to customize by adding other vegetables like bell peppers or chickpeas for added protein.
  •  This dish can be made ahead of time; it tastes even better the next day as flavors meld.
