  • 4 boneless, skinless chicken breasts (1 lb)
  • 2 tbsp extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken seasoned with salt and pepper; cook until golden brown and no longer pink inside (7-8 minutes).
  2. Stir in minced garlic and Italian seasoning; sauté until fragrant (1-2 minutes).
  3. Pour in heavy cream and simmer until slightly thickened (3-4 minutes).
  4. Cook pasta according to package instructions until al dente; drain and reserve some pasta water.
  5. Add mozzarella cheese to the sauce and stir until melted (about 2 minutes).
  6. Toss cooked pasta into the skillet with the creamy sauce, adding reserved pasta water as needed for desired consistency. Serve hot, garnished with fresh basil if desired.
