Ingredients
Scale
4 boneless, skinless chicken breasts (1 lb)
2 tbsp extra virgin olive oil
3 cloves fresh garlic, minced
8 oz fettuccine or penne pasta
1 cup heavy cream
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
Fresh basil leaves (optional, for garnish)
Instructions
Heat olive oil in a large skillet over medium heat. Add diced chicken seasoned with salt and pepper; cook until golden brown and no longer pink inside (7-8 minutes).
Stir in minced garlic and Italian seasoning; sauté until fragrant (1-2 minutes).
Pour in heavy cream and simmer until slightly thickened (3-4 minutes).
Cook pasta according to package instructions until al dente; drain and reserve some pasta water.
Add mozzarella cheese to the sauce and stir until melted (about 2 minutes).
Toss cooked pasta into the skillet with the creamy sauce, adding reserved pasta water as needed for desired consistency. Serve hot, garnished with fresh basil if desired.
Notes
For added flavor, consider substituting chicken with turkey or incorporating vegetables like spinach.
A sprinkle of crushed red pepper can provide a spicy kick.
