  • 1.5 lbs boneless, skinless chicken thighs
  • 2 large onions, finely chopped
  • 6 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 cup plain yogurt (full-fat)
  • 1 cup coconut milk (full-fat)
  • 3 tbsp korma spice blend
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tbsp cooking oil

Instructions

  1. Gather all ingredients on your countertop.
  2. In a large pot over medium heat, add oil and sauté onions until golden brown (about 8-10 minutes).
  3. Stir in minced garlic and grated ginger; cook until fragrant (1-2 minutes).
  4. Add korma spice blend, salt, and pepper; stir for another minute to release aromas.
  5. Incorporate diced chicken thighs; cook until they are no longer pink on the outside (5-7 minutes).
  6. Reduce heat to low; stir in yogurt and coconut milk. Simmer gently for 20-25 minutes until chicken is cooked through.
  7. Garnish with freshly chopped cilantro before serving over rice or with naan.
