  • 2 medium sweet potatoes (about 400g)
  • 1 ripe avocado
  • 1 lime (juiced)
  • Salt and pepper to taste
  • 2 tsp olive oil
  • Optional toppings: crumbled feta cheese, cherry tomatoes, fresh herbs

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into half-inch thick rounds.
  3. Arrange the slices on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt and pepper.
  4. Bake for 20-25 minutes until fork-tender and slightly caramelized.
  5. While baking, mash the avocado in a bowl, mixing in lime juice, salt, and pepper.
  6. Once the sweet potatoes are done, spread the mashed avocado on each slice.
