Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup sour cream (full-fat)
  • 1 tsp vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan with nonstick spray.
  2. Mix graham cracker crumbs and melted butter in a bowl until combined. Press firmly into the bottom of the prepared pan.
  3. Beat softened cream cheese in another bowl until smooth. Gradually add sugar and mix until fluffy.
  4. Incorporate sour cream and vanilla into the cream cheese mixture until well blended.
  5. Pour the filling over the crust and bake for 50-60 minutes until set but slightly jiggly in the center.
  6. Allow cooling at room temperature before refrigerating overnight. Top with fresh berries before serving.

Notes

  • Using fresh, ripe berries enhances the flavor and visual appeal.
  • For variations, try seasonal fruits like peaches or mangoes instead of mixed berries.
